Augusta Pretoria (the Latin name of Aosta)
Aosta (French: Aoste) is the principal city of the bilingual Aosta Valley in the Italian Alps, Near to the borders of Switzerland, France in Italy {68.32m north-northwest of Turin}. In the surrounding mountains you’ll find the highest European mountains the ‘Mount Matterhorn’ {Italian Monte Cervino} , the ‘Mont Blanc’ and the ‘Mont Rosa’ {Italian Monte Rose}. Aosta is about 191.22 feet above see level and reaches about 13.04 square miles. The town itself is outshined by ‘Mount Emilius’ {Italian Monte Emilius} It is situated near the Italian entrance of the Mont Blanc Tunnel, at the confluence of the Buthier and the Dora Baltea, and at the junction of the Great and Little St. Bernard routes. Aosta is not the capital of the province, as these functions are shared by the region and the communes.

Prugne valligiane Bacon-plums Starter / Antipasti
Ingredients for 6 persons 18 dried plums, washed with running, cold water, dry white wine, 18 peeled almonds, 18 slices of smocked bacon.
Preparation Soak & cover the washed dried plums with the dry white wine. If those got soft, take’em out and let’em drip off & keep the wine marinade. Take the stones out and fill an almond in each instead. Wrap each plume with one slice of smoked bacon and fix it with a wooden toothpick. Preheat the oven on 428°F. Put the bacon-plums side by side into oven ware, douse’em with some wine marinade and bake all for about 15 minutes in the preheated oven ‒ please turn’em ones. Take the oven ware out and let all cool down for about 10 minutes, than serve it in the ovenware.
Insalata di funghi Fresh made fungi salade Starter / Antipasti
Ingredients for 4 persons 12 ounce(oz) fresh, mixed fungi, e.g. {yellow} boletus, white mushrooms, maybe some Chanterelle, 1 lemon - the juice of it, 1 bunch leaf parsley, fine chopped, 1 egg yolk, 1 clove of garlic, 3,38 ounces quality virgin olive oil, Salt, Pepper from a mill
Preparation Clean the fresh fungi , chipped into fine slices, {at first fry the Chanterelle in butter shortly and than} drop on all fungi the juice of half a lemon. Whisk the egg yolk with salt, pepper and the other half lemon juice. Squeeze the garlic into. While stirring constantly fill the olive oil in. Mix the fine chopped parsley under. Flavour the sauce and drop it over the fungi.
Variations Prepare the sauce with lemon juice, olive oil, chopped anchovy fillet and hard-boiled fine chopped egg.
Or: Fresh fungi from the forest chipped into fine slices, steamed in some butter or nut oil, than and served lukewarm as salad.
Carbonada Beef goulash with onions Entrée / Secondi piatti
Ingredients for 4 persons 1.1 pound onions, peeled and chipped fine. 1.76 pound beef, washed, dabbed dry, cut into bite-sized cubes. 2 ounce(oz) butter. Salt & Pepper from a mill. 16,90 ounces dry red wine. 1 pinch fresh milled nutmeg. Flour to turn the beef in.
Preparation Turn the bite-sized beef in flour and shake off the excessive. Melt the butter in a stew pot. Stir-fry with a wooden spoon and take it out. Put the onions into the stew pot, salt’em and cover it and steam the onions by moderate heat vitreous. Put back the bite-sized beef into the stew pot, with some salt and a noble dash of fresh milled pepper and steam it by poor heat covered for one hour ‒ please fill from time to time some of the dry red wine in, as soon as the fluid starts to volatilise. At the end of the cooking time should be as result a viscid and fairly dark sauce. Improve the sauce with dash of milled nutmeg, salt and pepper stir it once more and serve the beef with hot Polenta.
Note In earlier years traditionally this meal was prepared with cured beef, on which where used lots of herbs. A similar recipe you’ll find in the Flemish Cuisine, but instead of wine there is used beer.

Augusta Pretoria {der lateinische Name von Aosta}
Aosta (französisch Aoste) ist die Hauptstadt der zweisprachigen Region Aostatal in den italienischen Alpen. Nahe der Grenzen zur Schweiz, zu Frankreich in Italien {110km nord-nordwestlich von Turin}. In den umliegenden Gebirgsmassiven befinden sich die höchsten Berge Europas wie das Matterhorn (Cervino), der Mont Blanc und der Monte Rosa (Mont Rose). Aosta liegt etwa 583 Meter über dem Meeresspiegel und erstreckt sich auf 21 Quadratkilometern. Der Ort selber wird vom Berg Monte Emilius überragt. Örtlich, nahe dem italienische Eingang des Mont Blanc Tunnels, dem Zusammenfluss des Buthier und der Dora Baltea, an den Kreuzungen der großen und kleinen St. Bernhardrouten. Aosta ist nicht die Hauptstadt der gesamten Provinz, diese Aufgaben sind aufgeteilt nach Region und Kommunen.
Hier sind drei Spezialitäten:
Prugne valligiane Speckpflaumen Antipasti / Vorspeise
Zutaten für 6 Personen 18 Trockenpflaumen, unter fließendem, kaltem Wasser waschen, trockener Weißwein, 18 geschälte Mandeln, 18 Scheiben geräucherter Speck Die gewaschenen Pflaumen mit Weißwein bedeckt einweichen. Wenn sie weich sind, herausnehmen und abtropfen lassen. Die Kerne entfernen und jeweils durch eine Mandel ersetzen. Jede Pflaume mit einer Scheibe geräuchertem Speck umwickeln. Speck und Pflaume mit einem Holzzahnstocher zusammenheften. Den Backofen auf 220°C vorheizen. Die Speckpflaumen nebeneinander in eine feuerfeste Form legen, mit einem Teil der Weinmarinade übergießen und etwa 15 Minuten im vorgeheizten Backofen backen, dabei einmal wenden. Die Speckpflaumen aus dem Ofen nehmen, etwa 10 Minuten abkühlen lassen und in der Form servieren.
Insalata di funghi Frischer Pilzsalat Antipasti/Vorspeise
Zutaten für 4 Personen 300 gr frische, gemischte Pilze, z.B. Steinpilze, Champignons, evt. einige Pfifferlinge, 1 Zitrone, den Saft, 1 Bund glatte Petersilie, fein gehackt, 1 Eigelb, 1 Knoblauchzehe, 1 dl feinstes Olivenöl, Salz, Pfeffer aus der Mühle
Zubereitung Frische Pilze putzen, in feine Scheibchen schneiden, mit dem Saft von ½ Zitrone beträufeln (Pfifferlinge zuerst kurz in Butter braten) Das Eigelb mit Salz und Pfeffer und dem übrigen Zitronensaft verquirlen. Knoblauch dazupressen. Nach und nach unter ständigem Rühren das Olivenöl einfließen lassen. Petersilie untermischen. Sauce würzen und über die Pilze träufeln.
Variationen Die Sauce aus Zitronensaft, Olivenöl, gehacktem Sardellenfilet und hartgekochtem , fein zerkleinertem Eigelb zubereiten. Oder: Frische Waldpilze in Scheiben schneiden, in etwas Butter oder Nussöl dünsten, dann mit Zitronensaft, Salz und Pfeffer aus der Mühle sanft würzen und lauwarm als Salat anrichten.
Carbonada Rindergoulasch mit Zwiebeln Secondi piatti / Hauptgericht:
Zutaten für 4 Personen 500 gr Zwiebeln, abziehen und fein schneiden 800 gr Rindfleisch, waschen, trocken tupfen, in mundgerechte Würfel schneiden 50 gr Butter Salz, Pfeffer aus der Mühle 5 dl Rotwein 1 Prise frisch gemahlene Muskatnuss Mehl zum Wenden
Zubereitung Das Fleisch, in Mehl wenden und das überschüssige Mehl abschütteln. In einem Schmortopf die Butter zerlassen. Das Fleisch darin unter Rühren mit einem Holzkochlöffel anbraten und herausnehmen. Die Zwiebeln in den Topf geben, salzen und zugedeckt bei mäßiger Hitze glasig dünsten. Die Fleischstücke wieder in den Topf geben, mit etwas Salz und einer großzügigen Prise frisch gemahlenem Pfeffer würzen und alles bei geringer Hitze zugedeckt etwa 1 Stunde schmoren, dabei immer wieder etwas Rotwein zugießen, sobald die Flüssigkeit zu verdunsten beginnt. Am Ende der Garzeit sollte eine sämige und ziemlich dunkle Sauce entstanden sein. Die Sauce mit 1 Prise Muskatnuss verfeinern, mit Salz und Pfeffer abschmecken, nochmals umrühren und mit dem Fleisch zu heißer Polenta servieren.
Anmerkung In früheren Zeiten wurde dieses Gericht traditionell aus gepökeltem, mit zahlreichen Kräutern gewürztem Rindfleisch zubereitet. Ein ähnliches Rezept findet sich in der flämischen Küche, bei dem jedoch anstelle von Wein, Bier verwendet wird.
